Banana Oat Pancakes

Banana Oat Pancake


  • 1 teaspoon of honey or maple syrup
  • 1 cup old fashioned oat
  • ½ tsp of baking powder
  • ½ tsp of ground cinnamon
  • 2 ripe large banana
  • 2 eggs
  • Pinch of salt
  • 2 tablespoon of coconut oil or melted butter
  • ¼ tsp of ground nutmeg


  • Blend all the ingredients together, apart from your old fashioned oat, baking powder and salt.
  • I n a medium bowl, whisk the oat flour, baking powder and salt.
  • Form a well in the centre of the dry ingredients and pour the liquid ingredients. With a big spoon, stir everything together just until the dry ingredients are thoroughly moistened, and be careful not to over mix.
  • You may want to thin out the batter a bit with a touch of water or milk. Let the batter sit for about 10 minutes.
  • Heat a heavy cast-iron skillet or non-stick pan over medium-low heat, or heat an electric griddle to 350 degrees Fahrenheit.
  • Lightly oil the surface with coconut oil, butter or cooking spray. You might not need any of these if you are using a non-stick electric griddle.
  • Once the surface is hot enough, using your Pancake Batter Dispenser pour in the batter into the pan. If you do not the batter dispenser tool, you can pour in ¼ cup of the batter in the pan.
  • Allow the pancake to cook for 3 minutes until bubbles begin to form around the edges of the cake.
  • Once the underside of the pancake is lightly golden, flip it with a spatula and cook for another 3 minutes or so. At this point, you may need to adjust the heat and cook until both sides are golden brown.
  • Serve the pancake immediately or keep warm in a 200 degrees Fahrenheit oven.
