How to Make Fried Rice

Possibly the most ordered meal or side on the menu at any take out restaurants, fried rice is loved by many people all around the world. Fried rice is a very simple yet delicious. The added beef liver gives the fried rice a very unique rich but subtle taste. You can also use shrimp or any protein you like; if you love to make vegan fried rice you can omit the beef liver or shrimps entirely.

To achieve a good result when cooking your fried rice, it is best to allow the freshly cooked rice (parboiled) to slightly cool before using it. The rice should be cool to touch before adding it to the pan, if you are short of time, just spread the rice on a sheet pan so that the steam can easily escape or just place the cooked rice in the fridge for a few minutes. It is important to always wash your rice before cooking it; this will help to remove the excess starch on the rice which can cause the rice to be clumped together. Perfect when you have leftover rice or you can quickly make it from the scratch with just a few tricks.

4 cups of rice

Vegetable oil

1 teaspoon of thyme

2 teaspoon of curry

Seasoning cubes

2 medium size green peppers

2 medium size onions

One handful of green beans


½ cup of chicken stock

Sweet corn

Sweet peas

Beef liver

Salt to taste

2 scallions

1 small size of cabbage

Dry pepper


1 stock cube

2 bay leaves

Cooking Directions

1. Chop the following vegetables together, carrots, onions, green pepper, sausages and liver. And set aside.

2. Parboil the rice. Place a large pot with a good fitting lid on a medium heat. Heat up one part of oil and add onions and bay leaves. Add curry, thyme, 1 season cube and salt. And water and stir, cover the pot, increase the heat to high and bring the mixture to a boil.

3.  Reduce the heat to low medium and add in the rice and stir. Tightly cover the pot and leave the rice to cook for about 15 to 20 minutes. Sieve out of the water and spread the rice on a flat plate to cool.  Also set aside.

4. Preheat the oil in the pan, throw the onions and fry for a minute or two, add the scallions, the chopped carrots and green beans and then stir for another two minutes then add the curry powder, thyme, add the cabbage, chicken stock, add dry pepper (optional) add sweet corn, sweet peas, green pepper and lastly you add your seasoning cubes. To your taste of course.

5. Throw in the rice and stir-fry for about 3 to 5 minutes. And take it off the heat.

For your chicken

1. First wash your chicken drumstick properly in clean rushing water.

2. Boil the chicken and seasoning with curry powder, thyme, season cube, salt and onions.

3. Pour some vegetable oil in a fry pan and fry your chicken drumstick and give it the golden brown look.

Your fried rice and chicken drumstick is ready to be served.


  • If the rice is not cooked to your desire, then leave the pot covered for another 5 to 10 minutes and do not add more water to it.
  • Is okay if you like your rice a little on the green or yellow side, but you don’t want an overpowering curry taste to it. You can use turmeric for colour and any curry flavour.
  • Season your vegetables while they are chopped and resting, it helps the overall flavour of the prepared rice.
  • Do season your boiled rice base or use broth. Water doesn’t work.
  • Do not overcook your rice. This is the first stage to disastrous fried rice. If the rice is mushy and overcooked just remake it.

Leftover cold rice is ideal to use because the grains are separate and cook easier in the work. That doesn’t mean that fresh pot of rice can’t be used, especially when the craving hits. It only takes about 20 minutes to prepare. The key to fresh rice is allowing it to cool slightly before using. The cooling process can quickly be done by spreading the rice on a sheet pan at a room temperature. The rice should be cool to the touch before adding it to the pan.


The type of rice you use for your fried rice is as important as the cooking. If you choose to use freshly cooked rice, make sure you choose the right type of rice. The long grain parboiled rice, this type of rice is very easy to work with when making fried rice likewise JOLLOF RICE because it is firmer and less sticky. Therefore, making it difficult to go wrong when Working with it.
