  • The baking powder will make it a little fluffier.
  • Adding butter or oil will make your pancakes softer.
  • You can also add other flavours like cinnamon, ginger, or vanilla.
  • Use a griddle or a heavy bottom pan to prevent your pancakes from getting burned or sticky.
  • Always keep an eye on your pancakes and never get tempted of increasing the heat to make them cook faster because they will easily get burned.
  • To easily peel a plantain, chop off both ends. Then slice lengthwise down the peel, peel away the outer layer to the flesh inside.
  • Plantains tend to burn pretty easily in a hot skillet. So keep the skillet on medium and use the first pancake as a test before cooking batches.
  • These pancakes are dense but fluffy. They soak up maple syrup-like skin parched for a little sunshine.

  • Peel and cut up your plantain into small pieces.
  • Place the slices plantain into a blender or a food processor and blend until smooth. You can also use a potato masher.
  • Then add the rest of the ingredients and blend until they all get lump-free and smooth.
  • Allow the batter to rest for a few minutes.
  • Heat a skillet or a non-stick frying pan while your batter is resting. Lightly coat the hot pan with vegetable oil, cooking spray or clarified butter.

  • Tilt pan so the batter spreads across the bottom of the pan.
  • Cook the pancake for about a minute on each side or until the bottom is light brown.
